      Fish amok

      Fish amokFish amok is one of the most well-known Cambodian dishes, but you’ll find similar meals in neighboring countries.

      The addition of slok ngor, a local herb that imparts a subtly bitter flavor, separates the Cambodian version from the pack.

      Fish amok is a fish mousse with fresh coconut milk and kroeung, a type of Khmer curry paste made from lemongrass, turmeric root, garlic, shallots, galangal and fingerroot, or Chinese ginger.

      At upscale restaurants fish amok is steamed in a banana leaf, while more local places serve a boiled version that is more like a soupy fish curry than a mousse.

      Khmer red curryLess spicy than the curries of neighboringThailand, Khmer red curry is similarly coconut-milk-based but without the overpowering chili.

      The dish features beef, chicken or fish, eggplant, green beans, potatoes, fresh coconut milk, lemongrass and kroeung.

      This delicious dish is usually served at special occasions in Cambodia such as weddings, family gatherings and religious holidays like Pchum Ben, or Ancestor’s Day, where Cambodians make the dish to share with monks in honor of the departed.

      Khmer red curry is usually served with bread — a remnant of the French influence on Cambodia.

      Lap KhmerKhmer beef salad features thinly sliced beef that is either quickly seared or “cooked” ceviche-style by marinating with lime juice.

      Having spent some time travelling in Thailand, I’m eager to visit more of south-east Asia, and visiting Vietnam is next on my list!

       

      After researching the country and jealously listening to recommendations given by other travellers, I’ve come up with a list of my top reasons why I want to travel to Vietnam.
      1. Delicious Food

      Despite the huge focus on other Asian cuisines such as Thai, Chinese and Indian food, I’ve heard great things about Vietnamese food and some of the dishes sound divine. Vietnamese food is also considered as one of the healthiest cuisines in the world which is always a plus!
      Many Vietnamese recipes include fresh ingredients such as lemongrass, ginger, lime and basil which all contribute distinct flavours to a recipe. Some dishes I’ve been recommended are Cha ca Thang Long which is fish marinated in turmeric topped with dill, Phở, a herby noodle soup served with either beef or chicken and the strange-sounding elephant ear fish, which is crispy, salted and served with herbs and vegetables. They all sound delicious and I plan on trying as many as possible on my Vietnam trip!

       


      2. Halong Bay

      No Vietnam travel experience is complete without a visit to the stunning Halong Bay, and winding round the limestone islands and visiting the ancient caves sounds like something special.
      I’ve heard the sunsets and sunrises are incredible to watch so it would be amazing to see these – I'm planning to stay overnight on one of the traditional Halong Bay junk boats so hopefully it will be easy enough to see both.

      3. Tropical Beaches

      Again, it seems that Vietnamese beaches are underrated with more focus given to the famous Thai beaches. I'd take advantage of this by spending some time on the deserted white sands before other tourists catch on...
      With white sands, towering palm trees and aqua blue waters some of the Vietnamese beaches such as this one on the tropical paradise island of Phu Quoc  below looks heavenly. Perfect for catching some rays and lounging with a cold beer...

      4. Atmospheric Cities

      Vietnam is home to cities full of character and there are several that I would love to visit. Hanoi, the lively capital is full of classic Vietnamese architecture, food and things to do, such as visiting the preserved body of the former president Ho Chin Minh – something a bit different!
      Not forgetting the smaller city of Hoi An where you can wonder round the narrow streets, lounge on the city’s nearby beaches or shop in Hoi An’s world-famous Vietnamese tailors.
      Lastly Ho Chi Minh City (the largest in Vietnam) is packed with museums, shops, bars and restaurants so there is plenty to do!

      5. Local People

      Finally, the people of a country can really complete your experience and I’ve only heard great things about the people of Vietnam – that they love to smile and are friendly and genuinely interested in getting to know the travellers that visit their country.
      I hope to meet them as soon as I can so I’d better get saving!

      Forget horse-riding, elephant riding is where it’s at in Phuket. It might not be the smoothest ride and it’s certainly not for anyone with a fear of heights, but it is one very cool way to get around. There are a variety of places to go on an elephant trek, both along the coastline and inland amongst dense jungle and spectacular mountain scenery.


      5. It’s always warm in Phuket

      Winter simply doesn’t exist in Phuket - well not in the normal sense of the word (their cool season still averages around 30 degrees Celsius). There is a wet season between May and November, which is the cheapest time to travel to Phuket, but you can still leave your jackets and scarves at home.


      6. Phuket is made up of 33 islands

      Sometimes you just want to escape reality for a day or two. From the main Phuket Island you are in easy reach of dozens of isolated tropical islands where you can have your own piece of paradise. While some of the islands, such as James Bond Island, can get very busy, there are plenty that will offer you a more secluded experience, particularly during off-peak seasons.


      7. Exciting night life on Bangla Road

      Not for the faint-hearted, Bangla Road in the city of Patong is a party-goers paradise. The moment the sun goes down, Patong comes to life. From live music venues to cabaret shows and everything in between, you’ll never forget a night out in Patong.


      8. Postcard-Perfect Sunsets

      Sunsets are always pretty, but Phuket consistently has some of the most photogenic in the world. With rugged islands jutting from the water and longtail boats silhouetted against the orange sunset, you’ll see why many locals and tourists give a round of applause as the sun goes down.


      9. The Food

      If you thought your local Thai restaurant served up a mouth-watering feast, wait until you try the real deal. Not only will you find authentic, fresh Thai food on every corner, but at just a few dollars for a typical meal you’ll have change left for dessert (and a sneaky Singha beer)!


      10. The Beaches

      There are beaches and then there are Phuket beaches. Across Phuket you’ll find more than 15 major beaches and dozens more secluded ones to discover.       Xishuangbanna, an autonomous prefecture of the Dai ethnic group which covers an area of 20 thousand square kilometers borders on Laos, Burma, Thailand, and Vietnam, located in the south of Yunnan Province in the People's Republic of China. Its one of the well-known tourist cities in China where the Water-Sprinkling Festival is held each year in the middle of April, famous for natural landscapes of tropical rainforests and minority folk-customs. Many of tourists from around the world visit here every year, especially in the boom season of tourism. If you like, you can go visit Xishuangbannan anytime in a year, since the weather temperature there keeps averagely 16, and only 28 even when its very hot in summer. Its a sunshine place where it never snow.       

       

       

      Rubbers, tea leaves, sugarcane, spices, tropical fruits and some other special local products are all produced in Xishuangbanna, and also there are some developed scenic spots, such as Primeval Forest Park, Wild Elephant Valley, Botanical Garden, tropical rainforests and so on. It is one of the scenic areas and also an important tourist development zone with abundant tourism resources. As you enter Xishuangbannan, you will feel as if you are in a green world where primeval forests, rubber plantation gardens and orchards all come into your sight.  

       

      The Peacock Lake which is surrounded by lakes around it looks as clean as a mirror, covering an area of 18700 square meters. It was developed as a park in 1977 where there are pavilions, exotic flowers, peacocks,pythons, foxes, wild boars, moneys, thrush birds, and some other endangered animals. And there is a waterside pavilion in the middle of the clean rippled lake, on which Pattra leaves, coconut trees, areca-nut trees and oil palm trees are all reflected. What’s more, visitors are allowed to enjoy scenery by boat on the lake.                   

       

      The Wild Elephant Valley of Xishuangbannan is situated in a natural preservation area in the north of Jinghong where there is a vast tropical rainforest that makes it possible for tropical plants to grow and wild animals like Asia elephants to live. There are only 300 Asia elephants in total now. They often haunt as a group at rivers, dense forests, or near people’s residences to hunt for food and water, or to take a walk. On the other hand, a number of tourists from the world are attracted by the landscapes of the tropical rainforest and wild Asia elephants.
